Gastronomy

The Iberian Triangle is a foodie’s paradise.   Spain leads the world in culinary innovation, with over 100 Michelin starred restaurants and some of the world’s most respected chefs such as Ferran Adrià and Juan Mari Arzak.  So popular is Spanish cuisine now that in many a household it is not unusual to find chorizo or authentic pimenton in the pantry.   From the paellas of Valencia or the tapas and pintxos of San Sebastian, there is a wealth of tastes to experience.
The gastronomy of Portugal centres around fresh fish, especially bacalao (cod) as well as shellfish and slow roasted meats such as kid.  Legend states that there is a recipe for bacalao for every day of the year but Portuguese cuisine offers much more than traditional fish dishes.   No longer an unfamiliar cuisine, travellers can increase their foodie repertoire, tasting classics such as caldo verde or enjoy fine cheeses, accompanied by world renowned ports and wines.
At the heart of Moroccan cuisine are the wonderful spices and fragrances, found in the national staples of cous cous and tagine but modern trends in food have taken North African cuisine to another dimension.  The sweet and savoury ‘pastilla’ pie is still a favourite, but young Moroccan chefs are introducing the world to an exciting and dynamic cuisine, rich with the flavours of lemon, olives and almonds.   Savour the journey!
